These Mexican Fajitas with Sweet Potato Rice were fun to make, boyfriend approved, AND ALL DONE IN ONE POT. You can really add any veggies in here that you have on hand - we used onion, jalapeño (obviously), tomato, pepper and avocado. And generously topped with Sriracha. This dish has a bunch of flavors coming at you - the rice is slightly sweet (which makes sense since it's SWEET potato rice), it's creamy from the avocado, spicy, and has lots of those Mexican flavors that we all love (cumin, chili powder, cayenne, paprika....). We had the filling as is, but next time, I'm planning to actually get some tortillas and make a Fajita!
