Have you guys seen Ela Vegan's blog? I've been hooked since I discovered it - she has so many good recipes and there is such a good variation in what she makes. This is one of my favorites from her - Mushroom Stroganoff. My boyfriend HATES mushrooms, so I don't have many opportunities to use shrooms in my dishes, but when I do, I make this.
This can really go with anything - I put it over rice but have seen it over pasta (or zoodles). You can even put it over little toasts and serve as an appetizer! Lazy Laura (that's me) now buys frozen rice that is literally done in 5 minutes on the stove - WHY did it take me until quarantine to discover this!??!?
This to me tasted like a "rich," savory sauce, but when you see the ingredients, you'll see that it's healthy, easy to make, and full of good-for-you ingredients.
